Let's lay this possibly unknown fact on the table before we get started, I am a devout lover of chocolate chip cookies. Particularly the ones we have available here at one of the popular supermarkets. Just the right amount of gooeyness to make you shove an entire batch in your mouth before you even have the time to reevaluate your life decisions. I've been on a mission to find the perfect chocolate chip recipe.
Many many trials later, I found one, and then added orange into the mix. What a heavenly creation if I say so myself.
I was in a major rush one day, baking batches and batches of cookies for a fair. Fair to say that the mind was wondering ever so slightly. Baking powder was thrown into the batter instead of the usual bicarb. And this was the beginning of the now loved "cake cookies", fluffy like a cake with all the elements of a chocolate chip cookie.
Orange "cake" Chocolate Chip cookies
225g softened butter
100g brown sugar
112g caster sugar
1tsp vanilla essence
1 egg
Zest of 2 oranges
Juice of 3 oranges (or according to taste)
260g flour
1/4 tsp salt
1 1/2tsp baking powder
175g chocolate chips
-In a large bowl, cream together butter, both sugars and the vanilla essence
-Add egg and zest to butter mixture
-In a separate bowl stir together flour, baking powder and salt
-Stir dry ingredients to butter/sugar mixture & finish off with fresh orange juice & chocolate chips
-If a more orangey taste is to your liking, add the juice of one more orange. In this case also increase the quantity of flour until dough is solid but not too stiff.
-Roll 40g balls and flatten slightly. Place onto a greased tray.
-Preheat oven to 180c and bake for approximately 15 minutes or until brown & slightly soft in the centre.
